Dinner idea: Filled chicken breasts {Paleo}

I try to eat Paleo most of the time, but I find that over weekends it’s difficult to stick to no bread / no cheese / no chips / etc. During the week I’m fine and I like to try out different Paleo recipes and ideas for dinner. I made these filled chicken breasts for dinner with ingredients we already had. They turned out absolutely divine!

You will need:

  • Deboned chicken breasts
  • Butter
  • Chilli or chicken spice of your choice
  • Spinach
  • Bacon
  • Coconut milk
  • Goats cheese

To make the dish:

Use de-boned chicken breasts and cut them open on the one side (almost like you would do with a pita bread) so that you have a thinner, bigger piece of chicken. Then tenderize the chicken meat – I used a wooden spoon. I cooked each chicken breast in some water and butter and only once they were all cooked, did I put them back in the pan to add some spices and colour to the meat. I used a chilli chicken spice and butter with my stove plate on medium heat, to brown the chicken breasts.

While I was cooking the chicken breasts, I also cooked some bacon (about 2 to 3 strips per chicken breast) and spinach with a ‘fake’ white sauce. For the spinach, I cooked it in water and butter and then added some coconut milk (only a tiny bit) to add some flavour. I then reduced the liquid over a medium heat.

I then layered a little bit of spinach, a few strips of bacon and goats cheese on each chicken breast and closed it. To hold the chicken breast in place I used a toothpick. I served these chicken breasts with sweet potatoe (sweetened with honey and butter) and asparagus wrapped in a piece of bacon. Divine!
