For Pieter’s birthday last week I decided to bake him a cake. I settled on a chocolate cake and had an idea for the icing and decoration of the cake, but I was still looking for a chocolate cake recipe. Two weeks ago I baked this flourless chocolate cake which came out divine, and I loved that the flourless cake lasted for days without getting hard or stale. I wanted to try something else and eventually found this chocolate cake recipe from BakingMad.com that I decided to use.
I baked the cake the day before by splitting the cake mix into two pans. Once the cakes were baked and cooled down, I stacked them with a caramel-chocolate filling (I made the filling by melting caramel treat and chocolate together). I also used the caramel-chocolate mix to ‘stick’ the Kit Kats to the side of the cake. The next day (when we had friends over for Pieter’s birthday lunch) I whipped up the cream, added it to the top of the cake and grated dark chocolate over. The cake looked impressive and tasted really good…we had the last slice a day or two ago. So yum! If you’re looking for an easy chocolate cake recipe, this is it. I like that the cake is so moist – this is partly thanks to the water you put in the oven when you bake the cake.
PS: I used the jumbo size Kit Kat chocolates to decorate the cake, the normal sized bar will be too small. I used two of the jumbo sized slabs to cover the outsides of the cake. Happy baking! 🙂
