This is one of my absolute FAVOURITE side dishes ever. When I was still in school I used to waitress at weddings for pocket money and in Kakamas, Tannie Keppies is THE best caterer when it comes to wedding food. Pumpkin fritters (pampoen poffertjies in Afrikaans) is one of her signature dishes (in my mind at least) and her’s has a caramel sauce that is too die for. She is the caterer at our wedding in March and of course pampoen poffertjies is on the menu 😉 I decided to try my hand at making this yummy dish and here is the result.
I used this recipe from Rainbow Cooking and not only is it easy to make, it came out really, really yummy. My oil was a bit too hot, therefore the very dark fritters, so next time I’ll have a bit more patience and aim for a golden brown colour. If you’re looking for a side dish for a Sunday meal or even a braai, give pumpkin fritters a go – I guarantee it will be a hit!
