We celebrated Valentine’s Day a tad bit earlier this year and I decided to cook a romantic dinner for us…it was the perfect opportunity to try out some new recipes. Starters was meant to be crackers, camembert and figs but we skipped straight to mains. Mains was cordon bleu, rice, a mixed salad and pumpkin pie topped off with this lovely baked cheesecake for dessert.
I used this recipe from BBC Good Food and even though I halved all ingredients, it was still too much for the two of us. I replaced the fresh berries with tinned strawberries and grapes and made use of the handy tip at the bottom of the recipe to place some of the strawberries at the bottom of the cake (on the crust) before you pour over the cheesecake mix. This results in yummy strawberry surprises as you cut into the cake. This is a fairly easy recipe and something that you can prepare the day before if you’re having guests over for dinner.
