I went shopping on Monday afternoon for all the ingredients that I’ll need for the Paleo meals I was going to make through the week. We had some sausage that we defrosted over the weekend and I wanted to use it in a Paleo-friendly dish for dinner. I came across a Paleo spaghetti recipe and I adjusted it to make the following dish.
Here is a step-by-step breakdown of how I prepared the meal. You’ll need:
- Olive oil (I know olive oil is not 100% Paleo-friendly, but I’ll slowly transition to everything Paleo. For now I’m using what I have :))
- One or two garlic cloves
- Two or three carrots
- A few cherry tomatoes
- Two celery sticks
While you heat the olive oil in the pan (or your cooking fat of choice), chop up all the ingredients. I fried whole garlic cloves with the ingredients and removed them before serving the dish.
Start by frying the garlic and onions and when they are turning brown, add the rest of the veggies. Once your veggies are almost completely cooked, add in the sausage pieces and fry until everything is cooked. I added a bit of water to the pan when I added the sausage, and once the sausage was almost cooked I used tapioca flour to make a sauce with the leftover liquid in the pan.
The meal turned out delicious and my fiance took the leftovers to work for lunch. It really is an easy recipe that’s suitable for either lunch or dinner.
