Homemade Paleo wrap with veggies and chicken

Since bread is not allowed on the Paleo diet, I’ve been researching ways to make Paleo-friendly wraps. I came across this recipe on Julia’s Paleo Pantry and decided to give the recipe a try.

You’ll need to following ingredients to make the actual wrap:

  • 2 eggs
  • 1 tablespoon coconut flour (I used tapioca flour since I haven’t been able to find coconut flour)
  • 3 tablespoons olive oil
  • 3 tablespoons water
  • pinch of salt

How to make the wrap:

Whisk the eggs well with a hand mixer. Add the flour, olive oil and salt and mix well. The mixture needs to be quite runny – almost like pancake mixture. Heat a little bit of olive oil in a pan and add some of the mixture to the pan (like you would when making pancakes). Cook on medium high heat for a few minutes and flip over to cook the other side.

I served our wraps cold filled with chopped up:

  • Cucumber
  • Mushrooms
  • Tomato
  • Steamed chicken
  • Carrots

I also made a sauce to go with the wrap by mixing two teaspoons of smooth cottage cheese, a little bit of olive oil and some lemon juice. The wraps came out well and they were tasty and filling – a bit too eggy for my taste so next time I’m going to try and tweak the recipe to include only one egg.

I made enough wraps and filling to pack lunch for the next day – I added a toothpick to keep the wraps closed (they’re stuffed with filling ;))
