After seeing a photo on Pinterest for red velvet cupcakes in glass jars I could not wait to try them myself. My fiancé’s birthday is around the corner and he wanted to take cake / cupcakes for his colleagues, so I decided to give the cupcakes-in-jars method a try. I used a red velvet cupcake recipe from Katherine Lewis’ blog and they came out perfectly.
A few tips from my side: Wait for the cupcakes to cool down completely in the pan before turning them out, otherwise they’ll crumble. I used 24 cupcakes to create 12 cupcake jars. To make a jar, cut the cupcake in four and place the pieces at the bottom of the jar. Press the cupcake pieces down with a spoon and cover with cream cheese topping. Take another cupcake (the pieces) and put another layer on top of the cream cheese layer.
If you want, you can add another layer of cream cheese but I find that the cream cheese topping is quite rich and that one layer is enough in most cases. I topped my desserts off with chocolate pieces and tied a spoon to each jar. Voila! 🙂
